Viv's Peanut Chicken

Ingredients
Marinade:
  • ½ c hot water
  • ½ c creamy peanut butter
  • ¼ c soy sauce
  • Chili Sauce
  • 2 T salad oil
  • 2 T vinegar
  • 4 cloves garlic
  • 2 t grated ginger
  • ¼ t red pepper
  • 12 chicken thighs skinned
Salsa:
  • 1 c chopped fruit (peaches, pears mangoes)
  • 1 c chopped cucumber
  • 2 T green onions
  • 2 T cilantro
  • 2 T sugar
  • 1 T salad oil
  • 1 T vinegar
Instructions
  1. Marinade: stir hot water into peanut butter. Add chili sauce, soy sauce, oil, vinegar, garlic, ginger and red pepper. Pour over chicken and chill 12-24 hours.
  2. To make the salsa: combine chopped fruit, cucumber, green onions, cilantro, sugar, oil (1 T), vinegar (1 T) cover and chill for 2 hours.
  3. Bake for 45 minutes at 425 degrees then broil 5 minutes to blacken.
