Marinade: stir hot water into peanut butter. Add chili sauce, soy sauce, oil, vinegar, garlic, ginger and red pepper. Pour over chicken and chill 12-24 hours.
To make the salsa: combine chopped fruit, cucumber, green onions, cilantro, sugar, oil (1 T), vinegar (1 T) cover and chill for 2 hours.
Bake for 45 minutes at 425 degrees then broil 5 minutes to blacken.
