Aloo Gobi (Mom's Cauliflower Curry)

Ingredients
  • 1 head cauliflower cut into medium florets
  • 1 t turmeric powder
  • 1 t salt
  • 6 T oil
  • 1 t ground cumin
  • 1 t cayenne powder (I usually use ⅛ t)
  • 1 tsp fresh ginger, grated ***
  • 3 small tomatoes, chopped
  • 1 t sugar
  • 3 T cilantro leaves, chopped (optional)
Instructions
  1. Mix cauliflower pieces with turmeric and salt. Heat oil in a large frying pan and sauté cauliflower pieces until tender and light brown. Remove fried cauliflower and set aside.
  2. In same oil, fry cumin, cayenne, and ginger for no more than 10-15 seconds stirring constantly to make sure the spices do not burn.
  3. Add tomatoes and sugar. Cook for 5 minutes. Add cauliflower pieces, lower heat and cover with a lid. Cook on low heat for 8-10 minutes until the cauliflower is cooked through.
Notes
***Fresh ginger can be stored in the freezer for many months. When you need to use some pull it out, grate what you need and then put the unused portion back in freezer.
