Good Morning Banana Nut Cereal
 
 
"This hot cereal is a delicious twist on oatmeal with some added protein and fiber to help satisfy you and keep you full. It's a great start for a good morning! Sometimes I heat up the water and milk real quick and let the quinoa soak while I'm in the shower, that way it can cook while I get ready and only needs a couple more minutes once everything else is added. Top with granola, if desired. Apple slices and/or sauce can be substituted for banana."

Ingredients
  • 1 ½ c water
  • 1 ½ c skim milk
  • ¼ c and 2 T quinoa or millet
  • 3 small banana, sliced***
  • ½ c and 1 T rolled oats
  • ¼ c and 2 T oat bran
  • 6 pinches salt
  • 6 pinches ground cinnamon
  • ¼ c and 2 T chopped walnuts
  • 2 T brown sugar
  • 1½ t vanilla extract
Instructions
  1. Stir the water, milk, and quinoa together in a saucepan; bring to a gentle boil. Reduce heat to low and simmer 5 minutes, or until the quinoa begins to soften. (I would cook more like 10 minutes especially if using millet.) Stir in the banana, rolled oats, oat bran, salt, and cinnamon. Cook, stirring frequently over low heat for 2 to 5 minutes or until the mixture thickens. Remove from the heat and stir in the walnuts, brown sugar, and vanilla. Notes
Candice note to this recipe: I like to add the bananas to each bowl of this instead of to the whole pot because the left overs don’t look great with blackish bananas in it. Also delicious is adding toasted non-sweetened coconut, pecans instead of walnuts and substituting coconut milk for the milk.
