Mel's Whole Wheat Bread

Serves: 4-5 loaves
Ingredients
  • 6 c hot water
  • ¾ c honey
  • 3 T soy lecethin
  • 2 T dough enhancer
  • 2 T sea salt
  • ¼ c vital wheat gluten
  • 14-16 c whole wheat flour
  • 2 T active saf instant yeast
Instructions
  1. In a cup combine 1 cup blistering hot water with honey. Stir until honey is dissolved. Pour into Bosch mixer with the remaining 5 cups of water. Then add lecethin, dough enhancer, vital wheat gluten, and 7-8 cups of flour. Turn to low speed and while mixing slowly add yeast. Once yeast is incorperated turn speed to medium and slowly add remaining 7-8 cups of flour a little at a time. Only mix enough to make a good ball that pulls away from sides and doesn’t stick to your finger too much.
  2. Set the timer and mix for 7 minutes. While mixing spray four bread pans. Pour olive oil on counter and place mixed dough ball into it coating the ball with a light layer of olive oil. Cut into four large loaves or five medium sized ones. Place into pans and knuckle down the loaves into the corners of the pans. Rise loaves on table (not on granite counter) until loaf is about 1 inch from top of pan (about one hour). Bake at 335 degrees (325 in convection) for approximately 32 minutes.
Notes
Vital Wheat Gluten, soy lecethin and dough enhancer can be found in most well stocked grocery stores, or baking stores. This recipe, due to it's extra gluten content is not a good one for anyone with gluten sensitivity.
