Mom's Greens with Cranberry Vinaigrette
- ¼ c plus 2 T red wine vinegar
- ½ c light extra virgin olive oil
- ¼ c plus 2 T fresh cranberries (Dried cranberries work almost as well
- 1 T plus 1 ½ t Dijon mustard
- ¾ t fresh minced garlic
- ¾ t salt
- ¾ t freshly ground pepper
- 3 T water
- Almonds, sliced and toasted
- 1 ½ lb mixed salad greens
- 6 oz bleu cheese, crumbled
- ½ red onion, sliced very thin
- Blend dressing ingredients in food processor or blender then toss with salad ingredients just before serving.
