Becky’s Creamy Italian Chicken

Crock-pot-creamy-italian-chicken1 My kids absolutely love this. They actually love anything my good friend, Becky makes. This can be served over rice or noodles. I try to use healthy versions of the Italian salad dressing mix and the condensed soup. Both found at our local whole foods store. The substitutions cost more but I have less guilt.

Ingredients
  • 3 breasts boneless, skinless chicken
  • 1 envelope Italian salad dressing mix
  • 1 cup water
  • 1 8-oz. cream cheese, softened
  • 1 can cream of chicken soup
  • Cooked rice or noodles
Instructions
  1. Place chicken breasts in slow cooker. Combine water and salad dressing mix. Pour over chicken. Cover and cook on low heat for 3 hours. Remove chicken and cut in bite size pieces. While you are cutting the chicken, add the cream cheese and soup to the broth and mix until it’s smooth. Place chicken back in crockpot and cook on low for 1 hour. Serve over rice or noodles.
