Lentil Sloppy Joes

Spicy-Lentil-Sloppy-Joes-3-of-4-433x650 My Mom is the source of most of my amazing recipes. This one she sent to me in 1997 while I was in France.  This is a healthy, hearty meal. Not a lot of prep time but save enough time for cooking. Kids even like these and the filling can be frozen and re-heated for camping. Omit the cheese and these are even eaten at room temperature (lunch).

Serves: 6
Ingredients
  • 1 lb dried lentils (about 2 cups) washed
  • 6 cups water
  • ½ to 1 diced onion
  • ⅓ c catsup
  • 2 T yellow mustard (not Dijon)
  • 3 T brown sugar
  • ¼ c BBQ sauce (add more to taste)
  • ½ t salt
Instructions
  1. Bring water and lentils to a boil reduce heat and simmer for 25 min.
  2. Combine all ingredients with cooked lentils and simmer on low for another 30 to 50 min.
  3. Serve on hamburger buns or French bread with melted provolone and a tomato slice. I like a dollop of sour cream as well.
