Creamy Stove-top Mac n’ Cheese

Mac-1-20-1024x682 My kids love this and there is no processed cheese! I make many variations to this recipe and it always turns out delicious. Use whole wheat or brown rice pasta and it can be a whole foods or gluten free meal!

Creamy Stove-top Mac n' Cheese

Serves: 4
Ingredients
  • 8 oz macaroni (2 c)
  • 2 large eggs
  • 1 can evaporated milk
  • 1 t dry mustard, dissolved in 1 t water
  • ¼ t Tabasco
  • Pepper to taste
  • 4 T (½ stick) butter
  • 12 oz cheddar cheese, shredded (3 c)
Instructions
  1. Boil the macaroni with 1 ½ t salt until it is almost tender but still a little firm to the bite.
  2. Mix together the eggs, half the evaporated milk, the mustard mixture, Tabasco, ½ t salt and ¼ t pepper.
  3. Drain pasta, return to pot on low heat. Stir in butter until melted. Stir in egg mixture and half the cheddar. Continue to cook over low heat, gradually stirring in the remaining milk and cheddar, until the mixture is hot and creamy, about 5 minutes. Season with salt and pepper (and Tony’s Creole Seasoning of course).
Notes
Variations: Sometimes I use cream instead of evaporated milk, other kinds of cheese like Colby Jack or Monterey Jack. Add garlic powder/salt or a dash of Johnny's Garlic Spread and Seasoning (found at Costco).
