Mom’s Greens with Cranberry Vinaigrette

cranberrysaladThis is a lovely salad with a bright red dressing and topped with bleu cheese, almonds and red onions. It is very simple and tangy.

Mom's Greens with Cranberry Vinaigrette

Ingredients
Dressing
  • ¼ c plus 2 T red wine vinegar
  • ½ c light extra virgin olive oil
  • ¼ c plus 2 T fresh cranberries (Dried cranberries work almost as well
  • 1 T plus 1 ½ t Dijon mustard
  • ¾ t fresh minced garlic
  • ¾ t salt
  • ¾ t freshly ground pepper
  • 3 T water
Salad
  • Almonds, sliced and toasted
  • 1 ½ lb mixed salad greens
  • 6 oz bleu cheese, crumbled
  • ½ red onion, sliced very thin
Instructions
  1. Blend dressing ingredients in food processor or blender then toss with salad ingredients just before serving.
