Pumpkin Chocolate Chip Cookies

pumpkin-cookies-011Fall = pumpkin cookies! We love this recipe and it is very adaptable. I make many, many substitutions to make it slightly healthier. (see substitutions in notes)

Pumpkin Chocolate Chip Cookies

Serves: 6 dozen
Ingredients
  • 3 cups canned pumpkin
  • 3 cups white sugar
  • 1-1/2 cups vegetable oil
  • 3 egg
  • 6 cups all-purpose flour
  • 2 tablespoons baking powder
  • 2 tablespoons ground cinnamon
  • 1-1/2 teaspoons salt
  • 1 tablespoon baking soda
  • 1 tablespoon milk
  • 3 tablespoons vanilla extract
  • 6 cups semisweet chocolate chips
  • 2 cups and 3 tablespoons chopped walnuts (optional)
Instructions
  1. Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
  2. Add vanilla, chocolate chips and nuts.
  3. Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.
Notes
My substitutions:
3 c of sugar: 1½ c sugar and 1½ c agave nectar
1½ c oil: 1½ c applesauce
6 c white flour: 3 c wheat and 3 c white
