Vegetarian Caesar Salad

images-1 Say goodbye to using anchovies forever! This wonderful salad is so simple and so delicious. I have always loved how the tart dressing clings to the homemade croutons. We’ve been enjoying this recipe for over ten years.

Vegetarian Caesar Salad

Ingredients
Dressing
  • 2 T mayonnaise (not Miracle Whip)
  • 2 T plain yogurt
  • ½ t tabasco sauce (or to taste)
  • ⅓ c parmesan (I use half pre-grated cheese
  • like Kraft and half freshly grated)
  • salt and pepper to taste
Croutons
  • French bread (good to make with day-old bread)
  • Olive oil
Salad
  • Romain lettuce
  • Cherry or grape tomatoes
Instructions
  1. Combine all dressing ingredients in separate bowl.
  2. Cube bread and brush both sides with olive oil then broil until toasted turning once.
  3. Mix Romaine lettuce, cherry tomatoes and croutons with dressing serve immediately.
