Portobello Burger

IMGP8878If you are a squeamish vegetarian this may not be the recipe for you! The mushroom is so meat-like that for those of us who love hearty food but can’t take the idea of eating meat, this is the perfect alternative. Top with caramelized onions, avocado slices, tomatoes and lettuce. Also delicious with a pesto/mayo spread or aoli.

Serves: 4
Ingredients
  • 4 portobello mushroom caps
  • ¼ c balsamic vinegar
  • 2 T olive oil
  • 1 t dried basil
  • 1 t dried oregano
  • 1 T minced garlic
  • Salt and pepper to taste
  • 4 (1 ounce) slices provolone cheese
Instructions
  1. Place the mushroom caps, smooth side up, in a shallow dish. In a small bowl, whisk together vinegar, oil, basil, oregano, garlic, salt, and pepper.
  2. Pour over the mushrooms. Let stand at room temperature for at least 15 minutes preferably longer, turning occasionally.
  3. Preheat grill for medium-high heat. Brush grate with oil. Place mushrooms on the grill, reserving marinade for basting. Grill for 5 to 8 minutes on each side, or until tender. Brush with marinade frequently.
  4. Top with cheese during the last 2 minutes of grilling.
