Cucumber Raita

komkommer-raitaSimple, refreshing and cooling. I recommend halving this recipe and serve it with any Indian dish. An essential part of any Indian feast.

Cucumber Raita

Serves: 6
Ingredients
  • 2 medium cucumbers, peeled and grated (we
  • prefer finely cut chunks not grated )
  • ½ t salt
  • 1 c plain yogurt or sour cream (yogurt is best)
  • 1 t roasted cumin seed*** (I rarely use this)
  • ¼ t paprika for garnish
Instructions
  1. Mix grated (or chopped) cucumber with salt. Let set at room temperature for ½ hour. Squeeze out and discard excess water.
  2. In a bowl, combine cucumber, yogurt and cumin. Mix thoroughly. Transfer to a serving dish, garnish with paprika and chill before serving
Notes
***To roast cumin sauté in small heavy pan and medium heat, using no oil for 15-20 seconds, until it turns a shade darker.
