Vegetable Lo Mein

Serves: 6
Ingredients
  • 1 pound dry Chinese noodles
  • 1 c chopped fresh mushrooms
  • 1 (8 oz) can bamboo shoots, drained
  • 1 c chopped celery
  • 1 c bean sprouts
  • ½ t chopped garlic
  • 1 t salt
  • 1 c vegetable broth
  • 1 t white sugar
  • 1 c water
  • 1 T soy sauce
  • 1 T oyster sauce (I never use)
  • 1 T all-purpose flour
Instructions
  1. Bring a large pot of lightly salted water to a boil.
  2. Add Chinese noodles and cook about 2 to 4 minutes; drain. In a large skillet or wok over high heat with a small amount or oil, cook mushrooms, bamboo shoots, celery, bean sprouts and garlic.
  3. Mix in salt, broth, sugar, water, soy sauce and oyster sauce; stir. Add flour and cook until thickened. Pour over noodles and toss lightly.
