Vegetarian Nachos, Tacos, Burritos

vegetarian-nachosThis is my ultimate go-to dinner for busy nights. It is also my favorite lunch. I love the endless options!

Vegetarian Nachos, Tacos, Burritos

Ingredients
  • Shells, fry bread or tortilla chips
  • Lettuce
  • Tomatoes
  • Sour cream
  • Guacamole or sliced avocadoes
  • Re-fried beans or Black beans
  • Cheese
  • Green onions
  • Green, yellow or red pepper
  • Hot sauce or salsa
  • Corn
  • Chopped jicama
For a different taste omit the re-fried beans and add:
  • Crumbled feta cheese (not melted)
  • Chopped pecans- toasted or not
  • A little of your favorite Italian type vinaigrette
Instructions
  1. Heat up the warm stuff, chop the veggies and then combine.
