Allyson’s Lentil Soup

lentil-soupThere is nothing fancy here. Just down-home cooking. Simple. Flavorful. And CHEAP! And did I mention easy? I usually prefer red lentils but in some recipes you just have to use the green (brown) ones that you can get in any grocery store. This soup is excellent served over brown rice.

Serves: 6
Ingredients
  • 6 bouillon cubes
  • 3 q water
  • 1 lb dried lentils
  • 1 chopped onion
  • 1 clove minced garlic
  • 2 carrots diced
  • 1 bay leaf
  • ¼ t dried mustard
Instructions
  1. Wash lentils and place in water.
  2. Add veggies, bay leaf and mustard bring to boil simmer 45 min-2 hours until lentils are tender.
