Mom’s Potato Soup

Leeks are used instead of onions, buttermilk rather than heavy cream, and Gruyere (pure deliciousness) instead of cheddar cheese. For a fancy lunch or light dinner I like to pair this with the Greek pita sandwiches. Always double this recipe….
