Easy Asparagus Soup

Skinny-Cream-of-Asparagus-Soup3This is a simple, satisfying recipe. Tasty too. My kids aren’t crazy about anything green except peas and broccoli so I don’t make it often.

Easy Asparagus Soup

Serves: 4-6
Ingredients
  • 2.5 lbs asparagus
  • 1 small onion chopped
  • ¼ c parsley
  • ½ t coriander
  • 3 T butter
  • 1 T flour
  • 3 c broth
  • 1 c heavy cream
  • 2 T lemon juice
  • salt
  • pepper (white is best)
Instructions
  1. Cook asparagus until just tender. Rinse in cold water to rejuvenate green color. Cut tips from stocks. Cut the rest of the socks into 1 inch pieces. Sauté onion, parsley, coriander and butter and sprinkle in flour. Cook 2-3 minutes stirring with a whisk. Remove from heat and stir in broth. Return to heat and simmer for five minutes. Add asparagus stocks then puree. Pour puree back into pan and add cream. Do not allow the mixture to come to a boil. Stir in lemon juice, salt and pepper. Garnish with asparagus tips.
