Bruschetta

6659994165_f886aea25c_zOur favorite summertime treat! Tomatoes, garlic and fresh basil in olive oil and balsamic vinegar served on a baguette.

Our most favorite summer time treat (along with corn-on-the-cob, peaches, raspberries, melon…) These ingredients are not finicky, you can use varying amounts of all the ingredients and it will always be delicious.
Recipe type: Appetizer
Ingredients
  • tomatoes, chopped
  • fresh garlic
  • fresh basil
  • balsamic vinegar (white and/or brown)
  • olive oil (full flavor)
  • fresh ground pepper and salt
  • baguette
  • parmesan cheese, freshly grated
Instructions
  1. Mix all ingredients in a bowl.
  2. Serve with baguette wedges.
  3. For a special occasion, brush wedges with a little olive oil, and parmesan then toast in oven. Or, toast both sides of bread lightly then add bruschetta and Parmesan cheese then toast again.
Notes
*options: use grape tomatoes halved and little mozzarella balls also halved. If using mozzarella add it right before serving.
