Renée’s Tomato Soup

April 27, 2015 by candicebeckwith Leave a Comment

TomatoSoup_DTThis is pure goodness! I love the addition of sun-dried tomatoes that give it a deeper flavor. We all love this recipe best with grilled cheese sandwiches-which we used to eat more of before my panini maker threw itself off the pantry shelf and exploded on the floor. That was a sad, sad day in the Beckwith household. Coconut milk or almond milk can be used to make it vegan but it won’t be quite as thick. …

Pesto Pasta

pesto-pastaLinguine noodles with fresh basil pesto topped with toasted pine nuts, fresh tomatoes and Parmesan.  This is one of my favorite summer time meals when my basil is growing like crazy in the garden. Penne with Butternut Squash & Goat Cheese

March 12, 2015 by candicebeckwith Leave a Comment

GH0228_pasta-squash-salad_s4x3.jpg.rend.sni12col.landscapeWe first tried this amazing, rich recipe at our friends, the Tanners when we were in Seattle.  Amy is one of the best cooks I know! Penne, roasted squash, goat cheese and toasted walnuts. This has just the right combination of flavors. (Admittedly I am a fanatic when it comes to both goat cheese and Butternut squash!) This is one of the few creamy pasta dishes that reheats really well. …

Salmon with Pineapple Tomato Salsa

February 10, 2015 by candicebeckwith Leave a Comment

pineapplesalmonWe have enjoyed this recipe for years. It is fresh and tangy and delicious. I usually use the frozen salmon steaks from Costco-farmed, not wild since the wild has a stronger fishy taste (not to mention the skin! Ugh!) and I am not always comfortable with the idea that I am eating fish! Omit the sugar, serve with brown rice instead of white and you’ve got yourself a whole foods meal….
