Spiced Parsley Mayonnaise for Mom’s Salmon

JalapenoParsleyMayoI hardly ever make this sauce to go with Mom’s Baked Salmon with Lemon-Thyme Crumb Topping because the salmon stands alone very well. But when I want to make it extra special I will go through the extra work. It is well worth it. Mayonnaise can be substituted by Vegenaise to make it vegan.

Spiced Parsley Mayonnaise for Mom's Salmon

Serves: Enough for Salmon
Ingredients
  • ¼ c minced fresh Italian parsley
  • ¼ c minced fresh cilantro
  • ¼ c minced green onions
  • 2 T red wine vinegar
  • 1 garlic clove, minced
  • ½ t minced fresh oregano or ¼ t dried
  • ¼ t freshly ground black pepper
  • ⅛ t cayenne pepper
  • 1 c mayonnaise (or maybe yogurt?)
Instructions
  1. Combine all ingredients except mayonnaise in a small bowl. Cover and let stand at room temperature at least 30 minutes
