Viv’s Peanut Chicken (Or Salmon)

indonesian-grilled-chicken-thighs-with-mango-peanut-salsa-84830-ss This is not a picture of Viv’s recipe but it looks close. Viv (my sister) made this one summer while we were all at Ft. George (family summer home on Pend Oreille lake in Northern Idaho). It looked so good I decided to try making it substituting the chicken for salmon. It was amazing! It is labor intensive, but perfect for a special meal or when you are trying to impress someone.

Ingredients
Marinade:
  • ½ c hot water
  • ½ c creamy peanut butter
  • ¼ c soy sauce
  • Chili Sauce
  • 2 T salad oil
  • 2 T vinegar
  • 4 cloves garlic
  • 2 t grated ginger
  • ¼ t red pepper
  • 12 chicken thighs skinned
Salsa:
  • 1 c chopped fruit (peaches, pears mangoes)
  • 1 c chopped cucumber
  • 2 T green onions
  • 2 T cilantro
  • 2 T sugar
  • 1 T salad oil
  • 1 T vinegar
Instructions
  1. Marinade: stir hot water into peanut butter. Add chili sauce, soy sauce, oil, vinegar, garlic, ginger and red pepper. Pour over chicken and chill 12-24 hours.
  2. To make the salsa: combine chopped fruit, cucumber, green onions, cilantro, sugar, oil (1 T), vinegar (1 T) cover and chill for 2 hours.
  3. Bake for 45 minutes at 425 degrees then broil 5 minutes to blacken.
