Mom’s Chickpea (Garbanzo) Curry

SNOW-DAY-JALAPENO-CHEDDAR-BISCUITS-AND-CHICKPEA-CURRY-042I never make this as a stand-alone dish but we love it along with the cauliflower curry. It is very fast, fairly healthy and really good.

Mom’s Chickpea (Garbanzo) Curry

Serves: 6
Ingredients
  • 2 T oil
  • 2 medium onions, minced
  • 2 cloves garlic, crushed
  • 6 whole cloves
  • 2 cinnamon sticks
  • 1 t ground cumin
  • 1 t coriander
  • 1 t salt
  • 1 t cayenne powder (cut back for less spicy)
  • ½ t turmeric powder
  • 2 cans garbanzo beans
  • 1 c cilantro, finely chopped
Instructions
  1. In a large frying pan, heat oil, and fry onion for 3-4 minutes until transparent. Add garlic, cloves, cinnamon, cumin, coriander, salt, cayenne and turmeric powder. Cook for 1 minute on medium heat stirring constantly. Pour contents of 2 cans of garbanzo beans, including liquid into pan. Simmer for 10 minutes. Remove from heat and stir in chopped fresh coriander right before serving.
