Spanish Rice

spanishriceNice for an extra special Mexican meal or if you are trying to cut down on processed foods. (My fast option is Lipton rice packets- full of processed yuckies but very tasty!)

 

Spanish Rice

Serves: 4
Ingredients
  • 2 T vegetable oil
  • 1 c uncooked rice (white or brown)
  • 1 onion, chopped
  • ½ green bell pepper, chopped
  • 2 c water
  • 1 Rotel
  • 2 t chili powder, or to taste
  • 1 t salt
Instructions
  1. Heat oil in a deep skillet over medium heat. Saute rice, onion, and bell pepper until rice is browned and onions are tender. Stir in water and tomatoes. Season with chili powder and salt.
  2. Cover, and simmer for 30 minutes, or until rice is cooked and liquid is absorbed.
Notes
Cooking time if using brown rice is more like 50 minutes.
