Nice for an extra special Mexican meal or if you are trying to cut down on processed foods. (My fast option is Lipton rice packets- full of processed yuckies but very tasty!)
Spanish Rice

Serves: 4
Ingredients
- 2 T vegetable oil
- 1 c uncooked rice (white or brown)
- 1 onion, chopped
- ½ green bell pepper, chopped
- 2 c water
- 1 Rotel
- 2 t chili powder, or to taste
- 1 t salt
Instructions
- Heat oil in a deep skillet over medium heat. Saute rice, onion, and bell pepper until rice is browned and onions are tender. Stir in water and tomatoes. Season with chili powder and salt.
- Cover, and simmer for 30 minutes, or until rice is cooked and liquid is absorbed.
Notes
Cooking time if using brown rice is more like 50 minutes.
