No Sugar Strawberry Freezer Jam

strawberry-freezer-jamI love homemade strawberry jam. It is my favorite of all jams. It makes me feel all sunshine-y.  This is also a great recipe for an over abundance of strawberries!

No Sugar Strawberry Freezer Jam

Serves: 32 oz
Ingredients
  • 3 lbs. strawberries, hulled and stems removed
  • 1¾ cups apple juice
  • 1½ package no sugar, low sugar pectin (1½ package really gets the jam to set perfectly)
Instructions
  1. Mash the strawberries in a large bowl.
  2. In a small saucepan, bring the apple juice and pectin to a boil and boil for 1 minute.
  3. Pour straight into the mashed strawberries and stir hard for 1 minute.
  4. Ladle into the freezer containers and place in the refrigerator overnight to let it cool slowly and set.
  5. Then store in the freezer.
  6. Good in the freezer for up to 1 year, in the fridge for 3 weeks.

Update: I just made this again for the first time in a looong time since there are so many strawberries available right now. Half my kids love it. Half my kids hate it. It is really good on it’s own but doesn’t taste great coupled with butter or peanut butter. I also think it would be better if it was made with white grape juice instead of apple.
