Amy’s Summer Lemon Pasta

GetImageAnother amazing creation from my friend Amy Tanner. This dish has broccoli, tomatoes, yellow squash, and asparagus tossed in a lemon cream sauce over pasta. (Chicken optional!)

Serves: 6
Ingredients
  • 3 T butter
  • 2 T chopped red onion
  • Choice of Veggies:
  • Tomatoes
  • Yellow squash
  • Asparagus
  • broccoli
  • Juice from 1-2 lemons
  • Lemon Pepper to taste
  • Italian Seasonings to taste
  • Basil to taste
  • Freshly grated parmesan cheese
  • ¼ - ½ heavy cream
  • 1 T olive oil
  • 1 lb penne pasta (or bowtie)
  • Cilantro (optional garnish)
Instructions
  1. Cook penne pasta. Sauté red onions in butter for two minutes. Add vegetables and sauté until tender.
  2. Add juice from one or two lemons, salt, lemon pepper, Italian seasonings, and basil. Reduce heat to med low then at last minute add Parmesan cheese and ¼-1/2 cup cream.
  3. To pasta add olive oil. Combine pasta and vegetables top with freshly grated Parmesan cheese. Garnish with cilantro. Optional: Cooked Chicken tenderloins with lemon pepper
