Caramelized-Shallot and Sage Mashed Potatoes

November 23, 2015 by candicebeckwith Leave a Comment

mare_caramelized_shallot_and_sage_mashed_potatoes_hWe call these the “Grown-up Mashed Potatoes” for the sake of my children who are purists. I am not a huge fan of just plain mashed potatoes and so the added texture and flavor of these really make them not only something special but something I will actually eat. These are especially suited for those vegetarians out there who don’t eat gravy. This recipe is so good and full of tasty delights, gravy isn’t even needed!…

nikkis_sweet_potato_recipeSweet potatoes, coconut milk, fresh ginger, maple syrup, grated coconut, butter and macadamia nuts combined for a perfect alternative to the super sweet traditional recipe. Wrapped Asparagus with Hollandaise Sauce

March 17, 2015 by candicebeckwith Leave a Comment

14450440_l This special occasion recipe comes from my mom. It is so good!  I would love to find a good whole foods crescent roll recipe but I can’t seem to find one that tastes as buttery and delicious as the Pillsbury variety. 15617807750_597fec5cc3_z I’ve been told this turkey is amazing! It looks so moist and smells great. Those in the know it tastes so moist and tastes great too! Plus, this recipe makes me feel very official and professional. I’m not sure why, maybe because as a vegetarian I just think that most of my meat dishes will turn out badly but this turns out exactly the opposite!

Brine first using equal parts sugar and salt. Use one cup of salt for a turkey under 18 lbs. and ¾ c under 12 lbs….

Becky’s Best Sugar Cookies

February 26, 2015 by candicebeckwith Leave a Comment

il_fullxfull.17597825You know it’s funny…some of the best recipes I have from my friend Becky are from her either bringing us a treat or dinner, or my kids being fed at her house and coming home and saying, “Mom, you NEED to get that recipe from her! Dinner was so delicious!” She serves by feeding us, then serves again by giving me the recipe! About a week before Valentine’s Day this year her family brought over these most amazing sugar cookies. I’m off sugar right now and have been for months but I crumpled when I saw those chewy cookies with the thick pink butter-cream frosting. Why do treats taste better in pastel colors? They are truly THE BEST sugar cookies ever! Use a royal icing recipe for beautiful decorating like the examples below. Use butter-cream frosting for deliciousness….
