Mama Zirkle’s Vegetable Lasagna

Vegetable-Lasagna-3763_092I grew up on this recipe that my mom made up. Marinara sauced broccoli, cauliflower, carrots, peas and zucchini with noodles.

Serves: 6-8
Ingredients
  • Oven ready lasagna noodles
  • Tomato sauce
  • 1 container ricotta cheese
  • Lots of Mozzarella
  • Steamed Vegetables: Broccoli, cauliflower, carrots, petite peas, zucchini or any other vegetables that sound good
Instructions
  1. Preheat oven at 350°. Layer ingredients in 9 x 13 pan. Some veggies and sauce first, followed by noodles, then all the ricotta and some mozzarella. Repeat noodles and then top with rest of veggies, sauce and mozzarella cheese.
  2. Bake covered until bubbly and noodles are soft. (Follow noodle package directions for how long to cook noodles).
  3. Uncover and bake for ten minutes.
