Gazpacho O’Dell

20100824-dt-alice-waters-gazpachoCold soup packed with flavor and vegetables. We had this at the O’dells in Chicago on our cross-country move. We had had nothing but greasy fast food for days and so eating this fresh, flavorful meal was a delight!

Gazpacho is a cold, raw soup that is full of flavor
Recipe type: Soup
Serves: 8
Ingredients
  • 4 c Clamato or V-8
  • 2 c tomatoes, diced
  • 1 cucumber, peeled, seeded and diced
  • ½ red onion, chopped
  • ½ celery, chopped
  • ½ bell pepper, chopped
  • 2 scallions, chopped
  • 2 cloves garlic, minced
  • ¼ c fresh parsley, chopped
  • 2 T wine vinegar
  • 2 T lemon and /or lime juice
  • 2 T olive oil
  • Salt, pepper, cilantro
Instructions
  1. Finely chop all of the ingredients and combine in a large bowl. Puree some or all of the soup (optional). Chill for several hours to over night.
  2. This recipe is quite flexible. It has been made with corn, carrots, green chilies, zucchini- you name it. Experiment to find the version you like best. Gazpacho is often served with side dishes of various toppings, such as; diced tomatoes, cucumbers, bell peppers, avocado, red onion, cilantro and croutons.
