Manly Homemade Popcorn

February 27, 2015 by candicebeckwith Leave a Comment

homemade-popcorn-1-525 I call this manly popcorn because it is a tradition in the Beckwith Family for the men to make the popcorn, on the stove top with all real ingredients! Wendell, my father-in-law makes the most amazing popcorn and Grant and now Sam have followed suit. The tradition in our home for movie night is Grant makes two HUGE bowls of popcorn and I make the smoothies. We make such a good team….

Homemade Ranch

February 27, 2015 by candicebeckwith Leave a Comment

homemade-ranch-dressing-mixMy kids will eat many raw vegetables as long as there is some Ranch dressing to dip it in! However, when trying to eat real foods, there aren’t many options out there. This is a super easy, super cheap way to make your own! The best part, you know what every ingredient is! (Unlike many of the 21 ingredients found in Hidden Valley Ranch Dressing!) It took some getting used to for the children but I love the fresh, tart taste of this recipe….

Maple Candied Nuts

February 27, 2015 by candicebeckwith Leave a Comment

maple-spiced-candied-nuts-2 I love these as a snack. The best part is there is no refined sugar. Also, make sure to include the dash of chili powder! It is surprisingly delicious!…

Spring Rolls

February 27, 2015 by candicebeckwith Leave a Comment

vegetable-spring-rice-paper-rolls-1-425x283Fun food memory: I tried these at a lunch where a bunch of like-minded healthy-eating mom’s got together and shared recipes. I loved them so much that a couple of days later, on a Friday night I decided to make them. That night Grant was out of town and so my sister Rebecca and I decided to have a Bill Murray movie marathon. We had just seen “What about Bob” so we watched “The Man Who Knew Too Little” and “Groundhog Day” back-to-back. We were up so late and enjoyed eating these the whole time! Serve with Thai Nut Dipping Sauce…

Béchamel, a.k.a White Sauce

February 27, 2015 by candicebeckwith Leave a Comment

img97lThis classic sauce adds a rich and creamy quality to a variety of vegetable dishes. It can be spooned over hot cooked vegetables just before serving or mixed with them to make an easy yet elegant creamed vegetable course. To turn the creamed vegetables into a gratin, place in a baking dish, top with cheese and then bake in the oven until golden….

Thai Nut Dipping Sauce

February 27, 2015 by candicebeckwith Leave a Comment

peanut+sauce+recipeThis is a yummy sauce to eat with spring rolls or just about anything else! It is very easy and versatile. I love this but the garlic is a killer on the breath. (You know it’s bad when your breath wakes you up at night). In the future I would VERY lightly sautée the garlic in a little olive oil, being careful not to scorch it before I add it to the sauce. …

Hawaiian Haystacks

February 27, 2015 by candicebeckwith Leave a Comment

Hawaiian+Haystacks+051-b It’s a Mormon thing, I know.  Although I have been LDS (Mormon) since I was a girl, and my mother grew up in primarily LDS communities, I did not try Hawaiian Haystacks until I was living in Washington D.C. as an adult and attended a baby shower hosted by an LDS friend. This is a meal that is universally appealing and one of the few that EVERYONE in my family will eat….

Tomato & Goat Cheese Quiche

February 27, 2015 by candicebeckwith Leave a Comment

garden-vegetable-quiche-03 I have always loved quiche. It is perfect hot, amazing cold, and really good room temperature! How many foods can you enjoy equally at any temperature? My love for this food only increased while I lived in France. It is a perfect food and can even be enjoyed crustless for those who cannot eat gluten. …

Vegetarian Pot Pie

February 27, 2015 by candicebeckwith Leave a Comment

IMG_3017This has been a comfort food for me for years. In the late 80’s when there was no internet and not a lot of vegetarians, or vegetarian resources, my Mom subscribed to Vegetarian Times, a monthly magazine. This recipe comes from that magazine and was an instant hit in our family! Between Mollie Katzen’s Moosewood cookbooks and this magazine my mother was able to stock my vegetarian recipe repertoire with plenty of delicious offerings!…
