Dal Maharani

March 1, 2015 by candicebeckwith

maxresdefaultThis is as close a recipe as I can find to Bombay House’s Dal dish I love so much! Urad (Urid) dal can be bought at an Indian Grocer. I always make this as a compliment to a vegetable dish….

Lentil Sloppy Joes

February 27, 2015 by candicebeckwith

Spicy-Lentil-Sloppy-Joes-3-of-4-433x650 My Mom is the source of most of my amazing recipes. This one she sent to me in 1997 while I was in France.  This is a healthy, hearty meal. Not a lot of prep time but save enough time for cooking. Kids even like these and the filling can be frozen and re-heated for camping. Omit the cheese and these are even eaten at room temperature (lunch)….

Spring Rolls

February 27, 2015 by candicebeckwith

vegetable-spring-rice-paper-rolls-1-425x283Fun food memory: I tried these at a lunch where a bunch of like-minded healthy-eating mom’s got together and shared recipes. I loved them so much that a couple of days later, on a Friday night I decided to make them. That night Grant was out of town and so my sister Rebecca and I decided to have a Bill Murray movie marathon. We had just seen “What about Bob” so we watched “The Man Who Knew Too Little” and “Groundhog Day” back-to-back. We were up so late and enjoyed eating these the whole time! Serve with Thai Nut Dipping Sauce…

Thai Nut Dipping Sauce

February 27, 2015 by candicebeckwith

peanut+sauce+recipeThis is a yummy sauce to eat with spring rolls or just about anything else! It is very easy and versatile. I love this but the garlic is a killer on the breath. (You know it’s bad when your breath wakes you up at night). In the future I would VERY lightly sautée the garlic in a little olive oil, being careful not to scorch it before I add it to the sauce. …

Hawaiian Haystacks

February 27, 2015 by candicebeckwith

Hawaiian+Haystacks+051-b It’s a Mormon thing, I know.  Although I have been LDS (Mormon) since I was a girl, and my mother grew up in primarily LDS communities, I did not try Hawaiian Haystacks until I was living in Washington D.C. as an adult and attended a baby shower hosted by an LDS friend. This is a meal that is universally appealing and one of the few that EVERYONE in my family will eat….

Spiced Parsley Mayonnaise for Mom’s Salmon

February 10, 2015 by candicebeckwith

JalapenoParsleyMayoI hardly ever make this sauce to go with Mom’s Baked Salmon with Lemon-Thyme Crumb Topping because the salmon stands alone very well. But when I want to make it extra special I will go through the extra work. It is well worth it. Mayonnaise can be substituted by Vegenaise to make it vegan….

Salade Niçoise

February 9, 2015 by candicebeckwith

IMG_8142This salad, ubiquitous in the South of France where I was a missionary is endlessly adaptable and adjustable. To make it vegetarian or vegan omit eggs and tuna- it is amazing even without both. (I’ve actually never had with tuna.)…
